VEGETARIANA

Ingredients for pizza for 2 persons: 

 - 400 gr of pizza dough  
 - 4 tablespoons of  pizza sauce  
 - 200 gr pizza cheese 
 - 180 gr mushroom
 - one tomato 
 - 6 zucchini rolls  
 - 6 rolls of eggplant 
 - 6 roll of green pepper 
 - 30 gr sweet corn 
 - 5 green olives
 - basil

Cut mushrooms on very thin slices.Thinly cut slices of  peppers,tomato,eggplant and zucchini.Grate  a cheese. Knead the dough and stretch it to a diameter of 36-38 cm, a recipe which you have on this page. Apply 4 tablespoons pizza sauce (recipe for the sauce also on this page), then evenly sprinkle the 60 gr of pizza cheese.Arrange  the entire amount of mushrooms per pizza, then arrange alternately  the remaining vegetables over the mushrooms, but do not go over each other.Over add sweet  corn.Sprinkle  with 100 gr of pizza cheese and dry basil. Bake  in preheated oven at 250 degreese  until nicely golden brown edges. The  remaining  pizza cheese sprinkle over the finished pizza.Cut olives into rings and decorate pizza.

PIZZA SALAD

We begin to slowly prepare for the holidays, which means a  healthy diet. Last year, when was the great heat, I made a couple of kinds of pizza salad on the integral healthy dough.It was unbelieveble how many people wanted to try them.This kind of pizza is made on previously prepared surface . I used the dough for a healthy pizza, which I give you again.

The recipe for a healthy pizza dough:

 - 700 gr. wheat integral flour
 - 300 gr flour for bread
 - 1 dl olive oil ( half cup )
 - 1 tablespoon sea salt
 - 2/3 teaspoon of sugar
 - 10 gr yeast
 - 0.5 liter of water +/- 5%

Knead dough according to the instructions given on the previous posts of this site.This recipe for a dough  is sufficient for 6 pizzas, sizes of  dough 22 cm.When you finish kneading, divide it into six equal balls, put in a plastic bag and leave in the fridge to rest for 12 -16 hours.Then is ready for use.If  you need fast dough, duplicate yeast, 45 minutes in a warm place and 45 minutes in fridge.Recipe for  pizza sauce you have also on the previous posts on this site.

 The dough stretched to 22 cm and then put in the middle of the dough baking pan of 20 cm. I did this for that reason to be formed the edges of dough during baking  and to not picked up in the middle of dough.Bake in already preheated oven at 250 degrees, bake 5 - 6 minutes, until the edges are not grow.Then, pull out of the oven, remove baking pan.Place where was baking pan cut a little with fork, return to oven and bake until the edges of the dough got brown.When is finished, pull it out and put in a clean kitchen towel to cool. Now you practically get a pizza with rim (edges ), but without filling. This year I tried a couple of combinations, or fillings, which I will now present. 

My pizza salads:

MIMOSA - Mix 2 tablespoons of crumbled cheese with a little sour cream and put on already baked dough.Put sporadically leaves of ham.One boiled egg cut into thin slices and arrange it over ham. A pickle  cut into thin slices and arrange it over egg.

 APPLE - Mix  2 tablespoons of crumbled cheese with a little sour cream and put on already baked dough.Over  cheese put  fresh cucumber cut into thin slices, about 10 pieces. 1/4 of  apple cut into thin slices, if possible, to be Grenny Smith, spread over cucumber.Half of  tomato cut thinly, and also spread over then  sprinkle some roasted sunflower seeds, if desired, you can add some grilled pumpkin seed.Sprinkle basil and a little salt.

RUCOLA - Mix  2 tablespoons of crumbled cheese with a little sour cream and put on  already baked dough.Over cheese aeeange fresh arugula, then  half of the tomato cut into thin slices over, then fresh cucumber cut into thin slices and arrange over tomato.Fresh pepper also cut into thin circles and put it over.Sprinkle with parmesan cheese and garnish with chopped olives. Optionally, you can decorate with cubes of feta cheese,too.

 TUNA - The finished surface coated with ready-made tartar sauce.Sweet corn spread over the surface of pizza.One can of  tuna drain off the excess oil.Tuna  spread over corn.If you put mayonnaise on surface, grate a pickle and add a pinch of dill.

 VITAMIN - Mix 2 tablespoons of crumbled cheese with a little sour cream and coated with already baked dough.One half of fresh carrot and grate it ,spread over cheese, grate and 1/4 apple, if it is possible to be Grenny Smith.Over deploy a salad of beetroot, which can be or chopped into slices or grated. 

SESAME - Mix 2 tablespoons of crumbled cheese with a little sour cream and coat on  already baked dough.Put sporadically leaves of ham.Pickle cut into thin slices and sort over ham.Arrange  with 50 grams of grated and cooked  mushrooms and sprinkle with toasted sesame seeds if desired.

 A LA CAPRESE - Cut tomato and mozzarella into thin slices and arrange alternately on the surface of  pizza untill you cover it all over.Put some salt, sprinkle with oregano and basil and cover with a tea spoon of olive oil.Decorate with some chopped olives.

VENDURO - Grill 50 grams of mushrooms,about  4 rolls of small eggplant, 4 rolls of zucchini and pepper,too.On surface  coated with mayonnaise, grate or cut a pickle , sprinkle with dill.Alternately arrange grilled vegetables, deploy four rings of fresh tomatoes and sprinkle with 50 grams of sweet corn.

PIZZA - SALATA - PICA


Počinjemo da se polako spremamo za godišnje odmore,što znači dijete i zdrava ishrana.
Prošle godine,kada su bile velike vrućine,napravio sam par vrsta pizza salata na integralnoj,odnosno zdravoj podlozi.Neverovatno je koliko su bile tražene.Ova vrsta pizze se pravi na unapred  pripremljenoj podlozi.Za podlogu sam koristio testo za zdravu pizzu,koji vam ponovo dajem.


Recept za testo za zdravu pizzu:

- 700 gr. crnog brašna TIP-1100 mlevenog na kamenu
- 300 gr brašna TIP-500
- 1 dl maslinovog ulja
- 1 supena kašika morske soli
- 2/3 supene kašike šećera
- 10 gr kvasca
- 0,5 l vode +/- 5%

Testo umesiti prema uputstvu koje je dato na ranijem postu ovog bloga.Količina testa je dovoljna za 6 pizza veličine 22 cm.Kada testo umesite,podelite ga na šest jednakih loptica,staviti u najlon kesu i ostaviti u frižideru da odstoji 12 -16 sati.Posle toga je spremno za upotrebu.Ukoliko vam je potrebno brzo testo,duplirati kvasac,45 min na toplom mestu i 45 min u frižideru.Sos za pizzu takođe imate na ranijem postu ovog bloga.

Testo razvući na 22 cm i zatim u sredinu staviti na testo pleh od 20 cm ili tacnu od šoljice za kafu.Ovo sam uradio iz tog razloga da bi se prilikom pečenja formirao obod za pizza salatu odnosno da se ne bi podigla sredina testa.Ubaciti u već zagrejanu rernu na 250 stepeni,peći 5 - 6 minuta,dok se ivice ne podignu.Zatim,izvući iz rerne,skinuti plehčić.Mesto gde je bio pleh izbuškati viljuškom,vratiti u rernu i peći dok ivice ne porumene.Kada je testo gotovo,izvući ga i staviti u čistu kuhinjsku krpu da se ohladi. Sada ste praktično dobili pizzu sa obodom,ali bez fila.
Letos sam probao sa par kombinacija,odnosno filova,koje ću vam sada i predstaviti.

Moje pizza salate:

MIMOZA -  Umutiti 2 kašike  sitnog sira sa malo kisele pavlake i premezati već gotovu podlogu.Možete koristiti i već gotov krem sir.Poređati mestimično listiće šunke.Jedno kuvano jaje iseći na tanje šnite i rasporediti ga po pizzi.Kiseli krastavac takođe iseckati na tanke šnite i rasporediti ga po podlozi.

APPLE -  Umutiti 2 kašike sitnog sira sa malo pavlake i premazati već gotovu podlogu.Preko sira poređati svež krastavac sečen na tanje kolutove,otprilike 10 komada.Narendati  1/4 jabuke ukoliko je moguće da bude Grenny Smith,rasporediti preko krastavca.Polovinu paradajza iseći na tanke šnite i takođe rasporediti preko pizze.Preko posuti malo pečenog suncokreta,a po želji možete dodati i malo pečene golice.Posuti bosiljkom i malo posoliti.

RUKOLA - Umutiti 2 kašike sitnog sira sa malo kisele pavlake i premazati već gotovu podlogu.Preko sira rasporediti svežu rukolu,preko rukole naređati polovinu paradajza isečenog na tanke šnite,zatim svež krastavac iseći na tanke kolutove i rasporediti preko paradajza.Svežu papriku takođe iseći na tanke krugove i rasporediti preko.Posuti parmezanom i ukrasiti seckanim maslinama.Po želji,možete ukrasiti i kockicama fete.

TUNA - Gotovu podlogu premazati sa gotovim  tartar sosom.Kukuruz šećerac rasporediti preko cele površine pizze.Jednu konzervu tune ocediti od viška ulja.Tunu rasporediti preko kukuruza.Ukoliko podlogu premazujete majonezom,narendajte jedan kiseli krastavac i dodajte prstohvat mirođije.

VITAMINSKA - Umutiti 2 kašike sitnog sira  sa malo kisele pavlake i premazati gotovu podlogu.Jednu polovinu sveže šargarepe narendati i rasporediti preko sira,narendati i  1/4 jabuke,ako je moguće da bude Grenny Smith.Preko rasporediti  salatu od cvekle,koja može biti ili seckana na listiće ili narendana.

SUSAM -  Umutiti 2 kašike sitnog sira sa malo kisele pavlake i premazati gotovu podlogu.Poređati mestimično listiće šunke.Kiseli krastavac iseckati na tanke kolutiće i poređati preko šunke.Rasporediti 50 grama dinstanih pečuraka i posuti pečenim susamom po želji.

A LA CAPRESE - Na tanke kolutove iseći paradajz i mozzarelu i naizmenično ređati na podlogu  dok se ista ne prekrije.malo posoliti,posuti origano i bosiljak i preliti sa jednom kašičicom maslinovog ulja.Dekorisati seckanim maslinama.

VENDURA - Izgrilovati 50 grama pečuraka,po 4 koluta manjeg plavog patlidžana, tikvice i paprike.Podlogu premazati majonezom,narendati ili naseckati jedan kiseli krastavac,posuti mirođijom.Naizmenično ređati grilovano povrće,rasporediti 4 koluta svežeg paradajza i posuti sa 50 grama kukuruza šećerca.
